Cafe Rio Pork

Ingredients:

  • 3 pounds pork roast (Butt or Shoulder)
  • 3/4 cup Coca Cola
  • 1 Tablespoon garlic minced
  • 3/4 cup catsup
  • 1 cup brown sugar - we use 1/2 cup of brown sugar but could omit if you wanted it less sweet
  • 2 limes, Juice only
  • Spicy Pickle Dip

Directions:

Place pork in crock pot. Top with garlic and Coca Cola. Cook on high 4-5 hours or until tender enough to shred. Shred pork and mix in the remaining ingredients except the spicy pickle dip. Cover and simmer on low until ready to serve. Enjoy with Spicy pickle dip as your condiment for your sandwich.
